Maple Pecan Granola

This Maple Pecan Granola is crunchy, sweet, and satisfying. It’s a meal prep staple that only takes 30 minutes to make. Great to pack for lunch, on road trips, or as a to-go breakfast! It’s a pantry staple.

You don’t have to be a tree hugger to love this maple pecan granola! These baked oats are spiced with cinnamon and sweetened with maple syrup and brown sugar. Plus the maple-glazed pecans on top are addictive! Have it for breakfast with some plant yogurt and it will keep you full until lunch.

Granola Ingredients:

  • 3 cups of rolled oats
  • 1/2 cup of pumpkin seeds
  • 1 teaspoon of pumpkin pie spice
  • 1 teaspoon of flaky salt
  • 2 tablespoons of brown sugar (or coconut sugar)
  • 1/3 cup of coconut oil, melted
  • 1/4 cup of maple syrup

Maple Pecan Ingredients:

  • 1 cup of pecans
  • 2 tablespoons of maple syrup
  • 1/2 teaspoon of pumpkin pie spice

Instructions:

Preheat the oven to 350 F (180 C).


In a large bowl add 3 cups of rolled oats, 1/2 cup of pumpkin seeds, 1 of teaspoon pumpkin pie spice, 1 of teaspoon flaky salt, 2 of tablespoons brown sugar, 1/3 cup of melted coconut oil, and 1/4 cup of maple syrup. Mix together until the oats are evenly coated.

Line a baking sheet with parchment paper, and evenly spread the granola on top. Bake for 15 mins.

In a medium bowl, mix together 1 cup of pecans, 2 tablespoons of maple syrup, and 1/2 teaspoon of pumpkin pie spice.

After it’s baked for 15 minutes, toss around the granola and add the maple coated pecans on top. Bake for 8 minutes. 

Let it cool down completely on the baking sheet. Serve with plant milk or yogurt.
