Lemon Blueberry Baked Oats

This blueberry lemon baked oatmeal is like you’re eating cake for breakfast! It’s easy to make and uses healthy and simple ingredients.

You’ll make this lemon blueberry baked oats recipe all the time now when you realize it requires a few pantry staples. Using only 10 ingredients and contains over 16 grams of protein and complex carbs. This makes sure to keep you full and satiated for a long time. This high-protein breakfast is great to eat before a workout because it gives me so much energy.

Ingredients for baked oatmeal:

  • 1/3 cup of oat flour
  • 3 tablespoons of vanilla protein powder 
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/3 cup of soy milk
  • 1 teaspoon of vanilla extract 
  • 2 tablespoons of lemon juice (about 1/2 a lemon)
  • 1 teaspoon of lemon zest
  • 2 tablespoons maple syrup
  • 1/3 cup of frozen blueberries

You will also need:

8 ounces ramekin or a small oven-safe dish. I use this: Porcelain Souffle Dishes Set.

Which vegan vanilla protein powder do I use?


I used to buy whatever protein powder was the cheapest, but then I realized not all of them have great ingredients. When I switch to a good protein powder it helped with my bloating, digestion, and skin.

How to make baked oats:

Preheat the oven to 350 Fahrenheit (180 C). If you do not have oat flour, blend up 1/3 cup of rolled oats in a blender.

To a medium bowl, add 1/3 cup of oat flour, 3 tablespoons of vanilla protein powder, 1/2 teaspoon of baking powder, 1/4 teaspoon of cinnamon, and a pinch of salt. Whisk together the dry ingredients.

Then add 1/3 cup of soy milk, 1 teaspoon of vanilla extract, 2 tablespoons of lemon juice, 1 teaspoon of lemon zest, and 2 tablespoons of maple syrup to the bowl. Combine the wet and dry ingredients and a batter will form.

Finally, gently mix in 1/3 cup of frozen blueberries and pour the batter into an 8-ounce ramekin or oven-safe dish. Add additional blueberries and lemon zest on top. Bake for 20 minutes.
