Description

This Maple Pecan Granola is crunchy, sweet, and satisfying. This recipe is a meal prep staple that only takes 30 minutes to make. Great to pack for lunch, on road trips, or as a to-go breakfast!


Ingredients

Granola:

  • 3 cups rolled oats
  • 1/2 cup pumpkin seeds
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon flaky salt
  • 2 tablespoons brown sugar (or coconut sugar)
  • 1/3 cup coconut oil, melted
  • 1/4 cup maple syrup

Maple Pecans:

  • 1 cup pecans
  • 2 tablespoons maple syrup
  • 1/2 teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350 F (180 C).
  2. In a large bowl add 3 cups rolled oats, 1/2 cup pumpkin seeds, 1 tsp pumpkin pie spice, 1 tsp flaky salt, 2 tbsps brown sugar, 1/3 cup melted coconut oil, and 1/4 cup maple syrup. Mix together until the oats are evenly coated.
  3. Line a baking sheet with parchment paper, and evenly spread the granola on top. Bake for 15 mins.
  4. In a medium bowl, mix together 1 cup pecans, 2 tbsps maple syrup, and 1/2 tsp pumpkin pie spice.

  5. After it’s baked for 15 minutes, toss around the granola and add the maple coated pecans on top. Bake for 8 minutes.

  6. Let it cool down completely in the baking sheet. Serve with plant milk or yogurt.
