Lemon pie lovers, I have the perfect oatmeal recipe for you! I’m sharing my go-to recipe that transforms your favorite dessert into a hassle-free breakfast staple. Overnight oats are a total game-changer for those mornings when you need something quick, tasty, and packed with protein. Ingredients:

  • 3/4 cup Soy Milk: I use soy milk because it’s the highest in protein, but you could do any plant milk such as almond, cashew, or coconut.
  • 2 tablespoons Maple Syrup: Agave syrup works too.
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Rolled Oats
  • 1 tablespoon Chia Seeds 
  • 2 tbsps (1 scoop) Vanilla Protein Powder 
  • 1/4 teaspoon Salt

How to make lemon pie overnight oats:

  1. To a sealable jar or bowl, add soy milk, maple syrup, lemon juice, and vanilla extract. After mixing the soy milk will start to curdle.
  2. Add rolled oats, chia seeds, vanilla protein powder, and a pinch of salt. Mix and cover it with a lid or plastic wrap.
  3. Refrigerate overnight (or for at least 3 hours).
  4. To crush the graham crackers, you can use a food processor or blender. If you don’t have one, just put them in a zip-top bag and crush them with a rolling pin. 
  5. Evenly spread lemon Greek yogurt and crushed graham crackers on top. Enjoy!
