How to make pickled red onions:

Bring 1 cup of water to a boil in a pot or kettle. Then remove the onion skin, cut it in half, and make thin slices. The onions should look like half-moons. *This is my favorite way to cut them, but you can slice them however you prefer.

Then grab a 16 oz wide-mouth glass jar and add 1 ½ teaspoons of salt, 1 teaspoon of organic sugar, 2 garlic cloves, ½ teaspoon of red chili flakes, and the sliced onions.

Pour 1/2 cup of apple cider vinegar into the jar, then add 1/2 cup of the boiling water. If onions are still poking above the liquids, push them down underneath and add more vinegar if necessary so everything is covered.

Let the jar completely cool down before securing the lid on tightly. Place it in the fridge for 6 hours or overnight.
