Description

These pickled red onions are sweet, tangy, and add a satisfying crunch to any savory meal! It’s a great staple to keep in the fridge, and prep only takes 5 minutes.


Ingredients

Scale
  • 1 red onion, thinly sliced
  • 1 ½ teaspoon salt
  • 1 teaspoon organic sugar
  • 1/2 cup boiling water
  • 1/2 cup apple cider vinegar
  • 2 garlic cloves (optional)
  • ½ teaspoon red chili flakes (optional)

Instructions

  1. Bring a cup of water to a boil. Thinly slice the red onions into half-moons while the water boils.
  2. To a 16 oz wide-mouth glass jar, add 1 ½ teaspoons of salt, 1 teaspoon of organic sugar, 2 garlic cloves, ½ teaspoon of red chili flakes, and the sliced onions to the jar.
  3. Pour in 1/2 cup of apple cider vinegar and 1/2 cup of hot water. If onions are still poking above the liquid, push them down underneath and add more vinegar if necessary.
  4. Let the jar completely cool down before securing the lid tightly. Place it in the fridge for 6 hours or overnight. Enjoy!
