Grinch Cookies (Matcha Crinkle Cookies)

I guarantee baking some Grinch cookies will put anyone in the Christmas spirit! These vegan crinkle cookies are flavored with matcha powder to give them the infamous Grinch green color, coated in powdered sugar, and topped with heart sprinkles.

Kids and adults will love these festive and chewy Grinch cookies. Perfect for cookie plates and dessert tables! All you need is 10 simple ingredients, a bowl, and a baking sheet. I highly recommend putting on some holiday music or your favorite Christmas movie while baking these cookies to really get into a cozy mood.

Matcha Crinkle Cookie Ingredients:

  • 2 tablespoons of ground flaxseed
  • 4 tablespoons of water
  • 1/2 cup of organic granulated white sugar
  • 1/4 cup of vegan butter, room temperature
  • 1 teaspoon of vanilla extract
  • 1 cup of all-purpose flour
  • 2 tablespoons of matcha powder
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of cinnamon

How to make Grinch Cookies:


Make a flax egg by mixing together 2 tablespoons of ground flaxseed with 4 tablespoons of water in a small bowl. Set it aside for 5 minutes.

Cream together 1/4 cup of vegan butter and 1/2 cup of granulated white sugar by using a stand mixer with the paddle attachment for about 1-2 minutes. Then add in the flax egg and 1 teaspoon of vanilla extract. Beat until it’s light and fluffy.

Add 1 cup of flour, 2 tablespoons of matcha powder, 1 teaspoon of baking powder, 1/4 teaspoon of cinnamon, and 1/4 teaspoon of salt to a sifter. Carefully sift it over the wet ingredients. Mix until well combined and make sure to scrape down the sides as you go to ensure even mixing.

Let it chill in the fridge for 1 hour or overnight.

After chilling, preheat the oven to 350 F (177 C). Line a large baking sheet with parchment paper. Place the granulated and powdered sugars in two separate small bowls.

Scoop 1.5-inch balls of dough out with a small cookie scooper or spoon. First coat the ball in granulated sugar, then roll it in the powdered sugar very generously, covering all sides (the more powdered sugar, the prettier the cookies will be).

Arrange the balls about 1-2 inches apart on the sheet. Bake for 10-12 minutes.

Let them cool for 10 minutes, then top each cookie with a heart-shaped sprinkle. Store any extra cookies in an airtight container for 4-5 days. Enjoy and happy holidays!
