These no bake brownies are so rich and fudgy while being full of healthy ingredients. These brownies are vegan, gluten-free, and contain no refined sugars.

You won’t believe how these delicious fudgy brownies only contain natural ingredients. Even non-vegans will find themselves eating every crumb from the plate!

No Bake Brownies

Ingredients for this vegan brownie recipe

  • 1/2 cup of Walnuts: Almonds work too.
  • 1 cup of Pitted Dates: About 10 dates.
  • 1/3 cup of Peanut Butter: Any nut butter works for this – almond, cashew, tahini.
  • 1/3 cup of Maple Syrup: Agave syrup would be a good alternative.
  • 1 teaspoon of Vanilla Extract
  • 1/4 cup of Cocoa Powder

Chocolate Drizzle Ingredients

You will need:

  • 8-inch loaf pan
  • Parchment Paper
  • Food Processor: I use the Cuisinart 8 Cup Food Processor.

How to make healthy vegan brownies


To a food processor add 1/2 cup of walnuts, 1 cup of pitted dates, 1/3 cup of peanut butter, 1/3 cup of maple syrup, one teaspoon of vanilla extract, and 1/4 cup of cocoa powder. Blend on high speed until sticky dough forms.

Line an 8-inch loaf pan with parchment paper. Then, scrape the food processor with a spatula and add all the dough to the lined pan.

If the dough is very sticky, add it to the loaf pan and place it in the freezer for at least 10 minutes. Freezing makes it easier to press the dough evenly across the pan.

After freezing for more than 10 minutes, place another piece of parchment paper on top of the dough.

Press down on the parchment-covered dough with a cup or something with a flat edge. Press until the dough is evenly spread across the pan, then place it back in the freezer for an hour.

After freezing – prepare the chocolate glaze. Add 1/2 cup of vegan dark chocolate chips and 1 tablespoon of coconut oil to a microwave-safe bowl. Melt the chocolate in the microwave by doing 30-second intervals and mixing it after every interval until it’s fully melted.

Pour melted chocolate on top of the brownies, and using the bottom of a spoon, evenly spread the melted chocolate all over. Then sprinkle flaky salt on top and put it back in the freezer for 4 hours or overnight.

No Bake Brownies

After freezing for a while, remove the brownies from the pan and slice them into 8 or more pieces. Enjoy!

Keep the brownies in the freezer to keep their form. They’re a delicious cold dessert to snack on.

  5. Pour the melted chocolate on top of the brownies and evenly spread it out.
  6. Sprinkle flaky salt on top and put it back in the freezer for 4 hours or overnight.
  7. Remove the brownies from the pan with the parchment paper and slice it into 10 pieces. Keep the brownies in the freezer to keep their form. Enjoy!
