Overnight oats are a total game-changer for those mornings when you need something quick, tasty, and packed with protein. Ingredients:
- 3/4 cup Soy Milk: I use soy milk because it’s the highest in protein, but you could do any plant milk such as almond, cashew, or coconut.
- 2 tablespoons Maple Syrup: Agave syrup works too.
- 2 tablespoons Lemon Juice
- 1 teaspoon Vanilla Extract
- 1/2 cup Rolled Oats
- 1 tablespoon Chia Seeds
- 2 tbsps (1 scoop) Vanilla Protein Powder
- 1/4 teaspoon Salt
Toppings:
- 2/3 cup (5.3 oz) Vegan Lemon Greek Yogurt
- 2 tablespoons Graham Crackers (or Biscoff cookies), crushed
How to make lemon pie overnight oats:
- To a sealable jar or bowl, add soy milk, maple syrup, lemon juice, and vanilla extract. After mixing the soy milk will start to curdle.
- Add rolled oats, chia seeds, vanilla protein powder, and a pinch of salt. Mix and cover it with a lid or plastic wrap.
- Refrigerate overnight (or for at least 3 hours).
- To crush the graham crackers, you can use a food processor or blender. If you don’t have one, just put them in a zip-top bag and crush them with a rolling pin.
- Evenly spread lemon Greek yogurt and crushed graham crackers on top. Enjoy!
