This sweet potato casserole is vegan, delicious, and covered in toasted marshmallows! It’s the perfect addition to the Thanksgiving table when you’re craving something sweet. This sweet side is sure to be a crowd-pleaser.
Every year, I make this vegan sweet potato casserole for my non-vegan family, and they always devour this dish. Everyone loves this recipe and can never get enough. They always ask me for the recipe and how to make it, so here it is!
Ingredients
- 2 pounds of sweet potatoes– Approximately 4 cups, peeled and chopped into large chunks.
- 3 tablespoons of vegan butter
- 1/3 cup of vegan heavy cream (or plant milk)
- 1 teaspoon of pumpkin pie spice (or cinnamon)
- 2 tablespoons of brown sugar
- 1 tablespoon of maple syrup
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
Marshmallow Streusel Topping
- 1/4 cup of vegan butter, chilled
- 1/4 cup of brown sugar
- 1/2 teaspoon of pumpkin pie spice (or cinnamon)
- 1/4 cup of all-purpose flour
- 1/4 teaspoon of salt
- 1/2 cup of pecans (or walnuts)
- 3 cups of vegan mini marshmallows: I get the Dandies brand of vegan marshmallows, you can get them on Amazon – Dandies Mini Vegan Marshmallows
How to make Vegan Sweet Potato Casserole
Preheat the oven to 375 degrees F (190 C). Wash, peel, and chop the 2lbs of sweet potatoes into large chunks (approximately 4 cups).
Bring a large pot of water to a boil, and add the chopped potatoes in. Boil for 10 minutes, until tender.
Once the potatoes are soft, drain the water from the pot. Add in 2 tbsps of vegan butter, 1/4 cup of vegan heavy cream (or soy milk), 1 tsp of pumpkin pie spice (or cinnamon), 2 tbsps of brown sugar, 1 tbsp of maple syrup, 1 tsp of vanilla extract, and 1/2 tsp of salt.
Using a potato masher, mash the potatoes until smooth and all the ingredients are combined.
Take an 8×8 baking dish, and lightly grease the sides with some vegan butter or spray. Transfer the mashed potatoes to the casserole dish.
How to make the Streusel Topping:
To a medium bowl, add 1/4 cup of vegan butter, 1/4 cup of brown sugar, 1/4 cup of all-purpose flour, 1/2 tsp of pumpkin pie spice (or cinnamon), and 1/4 tsp of salt. Use a fork to stir and mash the mixture. Then add in 1/2 cup of pecans (or walnuts).
Sprinkle 1.5 cups of vegan marshmallows over the sweet potato mash and add spoonfuls of the streusel. Evenly spread it on top of the casserole. Add the remaining 1.5 cups of vegan marshmallows.
Then, place the casserole in the oven for 18-20 minutes, until the marshmallows are golden brown. If necessary, broil at the end, but keep your eye on it to not burn.
Allow it to cool for about 10 minutes before serving.

Instructions

- Sprinkle 1 ½ cups of marshmallows over the sweet potato mash and add spoonfuls of the streusel evenly on top of the casserole. Then add the remaining 1 ½ cups of marshmallows over the top to cover the sweet potatoes.
- Bake for 20 minutes. If necessary, broil at the end for 1 to 2 minutes until the marshmallows are toasted to your liking. Make sure to keep your eyes on it so it does not burn!
- Allow it to cool for about 5 minutes before serving. Happy holidays!
