When you’re craving chocolate, make this velvety smooth vegan protein pudding! All you need for this delicious chocolate mousse is 5 ingredients: silken tofu, vegan chocolate chips, maple syrup, vanilla extract, and salt.

If you’ve never had tofu in a dessert format, then the recipe will surely surprise you! The blended tofu makes it creamy, smooth, and high in protein. After one bite, you won’t believe that this delightful pudding is a nutritious, vegan, gluten-free, and dairy-free dessert.

  • 1/4 cup maple syrup
  • 1 teaspoon cocoa powder
  • 1 teaspoon vanilla extract 
  • 1/2 teaspoon salt

What is tofu?

Tofu is made from soybean curds by coagulating soymilk. It’s then pressed and compacted into a block.

Tofu can be found in several different consistencies: Extra firm, firm, soft, or silken. Extra firm is my favorite for baking or frying and silken is best for desserts or smoothies.

It is naturally gluten-free, low in calories, and high in plant-based protein. It’s an excellent source of iron and calcium.

How to make high-protein chocolate mousse:

Carefully open the package of silken tofu and drain the water out.

Add 1 cup of vegan chocolate chips to a medium bowl. Microwave for 1 minute or more until all the chips are melted.

To a blender, add the silken tofu, maple syrup, vanilla extract, salt, and melted chocolate chips. Blend until smooth.

Pour the mixture into small bowls or ramekins, and let it set in the fridge for 1 hour.

Top with fresh raspberries and vegan whipped cream. Enjoy!
