Description

This vegan protein pudding is decadent, creamy, and so easy to make! Enjoy this mousse as a post-workout treat or after dinner for dessert.


Ingredients

Scale
  • 16 ounces silken tofu
  • 1 cup vegan chocolate chips
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Pudding Toppings:

  • fresh raspberries
  • vegan whipped cream

Instructions

  1. Carefully open the package of silken tofu and drain the water out.
  2. Add 1 cup of vegan chocolate chips to a medium bowl. Microwave for 1 minute or more until all the chips are melted.
  3. To a blender, add the silken tofu, maple syrup, vanilla extract, salt, and melted chocolate chips. Blend until smooth.
  4. Pour the mixture into small bowls or ramekins, and let it set in the fridge for 1 hour.
  5. Top with fresh raspberries and whipped cream. Enjoy!
