These pickled red onions are sweet, tangy, and add a satisfying crunch to any savory meal! It’s a great staple to keep in the fridge, and prep only takes 5 minutes.

- 1 red onion, thinly sliced
- 1 ½ teaspoon salt
- 1 teaspoon organic sugar
- 1/2 cup boiling water
- 1/2 cup apple cider vinegar
- 2 garlic cloves (optional)
- ½ teaspoon red chili flakes (optional)

Instructions
- Bring a cup of water to a boil. Thinly slice the red onions into half-moons while the water boils.
- To a 16 oz wide-mouth glass jar, add 1 ½ teaspoons of salt, 1 teaspoon of organic sugar, 2 garlic cloves, ½ teaspoon of red chili flakes, and the sliced onions to the jar.
- Pour in 1/2 cup of apple cider vinegar and 1/2 cup of hot water. If onions are still poking above the liquid, push them down underneath and add more vinegar if necessary.
- Let the jar completely cool down before securing the lid tightly. Place it in the fridge for 6 hours or overnight. Enjoy!
