Description
This vegan protein pudding is decadent, creamy, and so easy to make! Enjoy this mousse as a post-workout treat or after dinner for dessert.
Ingredients

- 16 ounces silken tofu
- 1 cup vegan chocolate chips
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Pudding Toppings:
- fresh raspberries
- vegan whipped cream
Utensils you’ll need:
- blender
- ramekins or small bowls
Instructions
- Carefully open the package of silken tofu and drain the water out.
- Add 1 cup of vegan chocolate chips to a medium bowl. Microwave for 1 minute or more until all the chips are melted.
- To a blender, add the silken tofu, maple syrup, vanilla extract, salt, and melted chocolate chips. Blend until smooth.
- Pour the mixture into small bowls or ramekins, and let it set in the fridge for 1 hour.
- Top with fresh raspberries and whipped cream. Enjoy!
