Craving something sweet for breakfast? Strawberry chia pudding is the way to go! It’s a healthy, easy, protein-packed snack or breakfast.
This has been my go-to breakfast all summer! In the past, I wasn’t a fan of chia puddings, but this strawberry version completely changed my mind. The berries naturally sweeten and add a delicious flavor to chia seed pudding, plus the yogurt makes it extra creamy.
Strawberry Chia Pudding Ingredients:
- 1 cup of Frozen Strawberries
- 1 cup of Plant Milk: Soy milk is my go-to.
- 1 tablespoon of Maple Syrup: Or a more budget-friendly option would be Agave.
- 1/2 teaspoon of Vanilla Extract
- 1/2 cup of Vegan Vanilla Yogurt: I love the 24 oz tubs of the Silk Dairy Free Vanilla Soy Yogurt. You could also use a vegan Greek yogurt to make it higher in protein.
- 5 tablespoons of Chia Seeds
Toppings:
- Granola
- Fresh or Frozen Berries
How to make Chia Pudding:
- To a blender, add the frozen strawberries, milk, maple syrup, vanilla extract, and yogurt. Blend on high until it’s smooth.
- Pour the blended contents into a sealable container or bowl. Add in the 5 tbsps of chia seeds and mix.
- Refrigerate overnight (or for 3 hours).
- Enjoy it cold and topped with your favorite fruit and granola.
