These Lemon Pie Overnight Oats are like a slice of heaven in a jar! It’s a morning lifesaver when you need a grab-and-go breakfast that’s also delicious and nutritious.

- 3/4 cup Soy Milk (or any plant milk)
- 2 tablespoons Maple Syrup
- 2 tablespoons Lemon Juice
- 1 teaspoon Vanilla Extract
- 1/2 cup Rolled Oats
- 1 tablespoon Chia Seeds
- 2 tbsps (1 scoop) Vanilla Protein Powder
- 1/4 teaspoon Salt
Toppings:
- 2/3 cup (5.3 oz) Lemon Greek Yogurt
- 2 tablespoons crushed Graham Crackers (or Biscoff Cookies)
Instructions
- In a sealable jar or bowl, combine soy milk, maple syrup, lemon juice, and vanilla extract. Mixing the soy milk with lemon juice will cause it to slightly curdle. Add rolled oats, chia seeds, protein powder, and a pinch of salt, then mix well.
- Cover the jar or bowl with a lid or plastic wrap, and refrigerate overnight (or for at least 4 hours).
- To prepare the graham cracker topping, use a food processor or blender to crush the graham crackers. Alternatively, place the graham crackers in a zip-top bag and crush them with a rolling pin.
- Once the oats are ready, evenly spread lemon Greek yogurt and the crushed cookies on top. Enjoy!
