Description

This blueberry lemon baked oatmeal is like you’re eating cake for breakfast! It’s easy to make and uses healthy and simple ingredients. 


Ingredients

  • 1/3 cup oat flour
  • 3 tablespoons vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 tablespoons lemon juice (about 1/2 a lemon)
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/3 cup plant milk
  • 2 tablespoons maple syrup
  • 1/3 cup frozen blueberries

Instructions

  1. Preheat the oven to 350 Fahrenheit (180 C). If you do not have oat flour, blend up 1/3 cup of rolled oats in a blender.
  2. To a medium bowl, add 1/3 cup of oat flour, 3 tablespoons of vanilla protein powder, 1/2 teaspoon of baking powder, 1/4 teaspoon of cinnamon, and a pinch of salt. Whisk together the dry ingredients.
  3. Then add 1/3 cup of soy milk, 1 teaspoon of vanilla extract, 2 tablespoons of lemon juice, 1 teaspoon of lemon zest, and 2 tablespoons of maple syrup to the bowl. Combine the wet and dry ingredients and a batter will form.
  4. Finally, gently mix in 1/3 cup of frozen blueberries and pour the batter into an 8-ounce ramekin or oven-safe dish. Add additional blueberries and lemon zest on top. Bake for 20 minutes.
  5. Let it cool down for about 5 minutes before biting into it, and enjoy!
