Description

Getting bored of the same recipes every week for dinner? Add this Lemon Pepper Tofu to your weekly rotation! It’s easy to make, bursting with flavor, and high in protein.


Ingredients

Tofu Breading:

  • 2 tablespoons Cornstarch
  • 2 tablespoons Nutritional Yeast
  • 1/2 teaspoon Dried Thyme Leaves
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 block (450g) Super Firm Tofu, cut into triangles
  • 3 tablespoons Olive Oil, for the pan

Lemon Pepper Sauce:

  • 1/2 cup Vegan Chicken Broth (or Vegetable Broth)
  • 1 teaspoon Lemon Zest
  • Juice of 1 Lemon (3 tablespoons)
  • 1 tablespoon Maple Syrup
  • 2 Garlic Cloves, minced
  • 1 teaspoon Cornstarch
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Kosher Salt
  • 1/2 teaspoon Red Pepper Flakes (optional for spice)

Instructions

  1. Remove the tofu from its package, pat dry, and slice it into thin rectangles.
  2. Lemon Pepper Sauce: To a measuring cup or bowl, add vegan chicken broth, lemon juice, maple syrup, cracked black pepper, cornstarch, minced garlic cloves, and red pepper flakes. Whisk until combined and set aside.
  3. Breading: To a medium bowl, add cornstarch, nutritional yeast, dried ground thyme, salt, and cracked black pepper. Mix.
  4. Set a large pan on medium-high heat and add enough oil to coat the bottom of the pan.
  5. Dip each piece of tofu into the breading, fully coat it, tap it on the side of the bowl to get the excess off, and carefully add it to the hot pan. Flip the tofu pieces occasionally so it crisps up on both sides.
  6. Mix around the lemon pepper sauce before pouring it into the tofu pan. Turn the heat off and the sauce should thicken up in a few minutes.
  7. Serve immediately with your favorite veggies and rice (or mashed potatoes). Enjoy!
